Discover Hyaku Sushi

If you find yourself wandering around Gamlestads Torg 5, 415 12 Göteborg, Sweden, and craving something fresh, precise, and beautifully plated, Hyaku Sushi is the kind of place that quietly steals the spotlight. I’ve visited several sushi spots across Gothenburg over the years, but this one stands out for how consistently it delivers on flavor, presentation, and service without feeling pretentious.

The first thing you notice is the clean, minimalist interior. It mirrors the philosophy behind Japanese cuisine-simplicity with purpose. The menu isn’t overwhelming, yet it covers everything you’d expect from a serious sushi bar: nigiri, sashimi, maki rolls, poke bowls, and a handful of warm dishes like tempura and miso soup. On my last visit, I ordered a mixed nigiri platter and a salmon poke bowl. The fish was glossy and firm, a clear sign of freshness. According to the Food and Agriculture Organization, proper seafood handling and temperature control are crucial for quality and safety, and you can taste that attention to detail here.

One thing I always pay attention to in sushi restaurants is the rice. It’s surprisingly technical. Sushi rice should be slightly warm, seasoned with rice vinegar, sugar, and salt in balanced proportions. The texture must be sticky enough to hold together but not mushy. At Hyaku Sushi, the rice hits that sweet spot. I once spoke briefly with a staff member who explained that they prepare fresh batches throughout the day rather than letting it sit for hours. That process alone elevates the overall experience.

Customer reviews online frequently mention the generous portions and fair pricing, especially considering Sweden’s typically high dining costs. Göteborg locals often compare it to other sushi restaurants in the city center, and many appreciate the calmer atmosphere here in Gamlestaden. It feels less rushed. During weekday lunch hours, you’ll see office workers ordering bento-style lunch specials, while evenings bring in families and small groups sharing large sushi platters.

From a nutritional perspective, sushi can be a balanced meal when done right. The World Health Organization highlights the benefits of omega-3 fatty acids found in fatty fish like salmon and tuna. Dishes like sashimi and salmon nigiri offer lean protein, healthy fats, and minimal processing. Of course, moderation matters, especially with soy sauce and fried options, but the menu here makes it easy to choose lighter combinations.

Another real highlight is their specialty rolls. One I tried combined shrimp tempura, avocado, and spicy mayo, topped with thin slices of salmon. The contrast between crunch and creaminess was spot on. It’s the kind of roll that feels indulgent without overpowering the palate. The chefs clearly understand balance, which is a cornerstone of Japanese culinary tradition. Culinary experts often emphasize that authentic sushi isn’t about heavy sauces but about letting the fish speak for itself, and that philosophy is evident here.

Service is friendly but efficient. Orders arrive quickly, and takeaway is neatly packed, which matters if you’re bringing sushi home. I’ve ordered takeout on a rainy Gothenburg evening, and even after a short commute, the texture and temperature held up well. That tells me they’ve refined their packaging process.

In terms of location, being right at Gamlestads Torg makes it accessible by tram and bus, which adds to its convenience. Whether you’re a sushi enthusiast who can tell your hamachi from your maguro, or someone just exploring Japanese cuisine for the first time, the restaurant feels approachable. The staff are happy to explain menu items, and that openness builds trust.

Every restaurant has limitations, and peak hours can mean a short wait for seating. Still, the consistent quality, thoughtful preparation methods, and solid customer reviews make it one of the more reliable sushi destinations in Göteborg. When freshness, technique, and atmosphere align this well, you don’t just get a meal-you get an experience that keeps you coming back.

  • Went there twice while in Gothenburg, the food is amazing, I also love that they have self serving soup, which tastes absolutely amazing. The staff is also very nice. All in all a, very positive and nice experience. Will definitely come back when in Gothenburg again

  • The food is delicious, well prepared, great presentation on the plate as well. Staff was nice. The price is very good as well. They have a very small space though, you sit very close to other costumers. Overall, on the best sushi places I’ve been.

  • Had takeaway this time. Food was exquisitely good as always. Very fresh. Very well seasoned and as always at Hyaku with that little bit of sallads and garnish that makes this place stand out from the rest. 10 out of 10. Would recommend.

  • With the new development around Gamlestaden, it slowly becomes kind of a hub for a new restaurant scene. Hyaku is one of them, situated right at Gamlestads torg and offering mainly Sushi, but also some Japanese-inspired stir fry. The atmosphere of Hyaku is modern and calm. It feels quite nice to enter, though the place is pretty small and some seats are outside the restaurant in the hallway next to the gym entrance. It’s a bit awkward, but they make the best of it. The menu is nicely designed with many good pictures, so you can get an idea straight away. They try to give an exclusive vibe, but the prices are pretty low. Edamame at 55 SEK, wakame at 35 SEK or a main dish around 139 SEK. Very okay on that front. They offer some vegan sushi rolls, even crispy one that is deep fried in a tempura batter. Not a regular sight! Other than that, there are some stir fry options with tofu. We went for both crispy vegan and the spicy wok with tofu. Both dishes arrived shortly thereafter and are served on nice plates with a side salad. The side salad has some interesting cucumber cutting techniques as you can see on the picture, but that’s alright. Taste-wise it’s pretty decent. The sushi is well composed and gives a very comforting vibe all together. High quality ingredients are clearly used here. The stir fry is well done as well. The tofu is deep fried and nicely puffed up and crispy and works well with the vegetables in the sauce. The sauce itself is not the greatest one and a bit too strong, or rather too much of it is used, but all in all it’s a very decent execution and dish. At another time I also tried the black pepper wok, but that sauce is a bit too strong on the pepper in my opinion. Still, decent and a nice change. Hyaku also offers lunch deals to a fair price and overall it’s a little bit of a hidden gem. It can get packed however, especially during lunch as options are limited around the area. --- Hyaku is a great place for some vegan sushi or stir-fry if you are craving it. One of the better places around Gothenburg, and especially Gamlestaden, and the kitchen definitely desires a high quality of their ingredients. Recommended!

  • Really yummy sushi and bento boxes. Good and fast service. First we thought the location of the restaurant was a bit weird. But it’s actually really convenient, also gives an international feeling! Will absolutely go back.

  • The place seems to be quite popular. Only five tables inside but people are coming for take away all the time. Nice and quick service. Unfortunately no toilet inside. Water and soup are at the self-service table

  • Great place to enjoy South East Asian preparations. The overall experience is really nice, the services is super friendly and attentive towards the clients, the place is cozy and comfortable and the food is delicious; the flavour, portions sizes and price of the meals are really good. Personal recommendation: Go for the Chef Selection.
